In my love of cooking, I love finding great new recipes to try. But I also love the growing confidence of editing recipes, even on the first run, if I feel inspired or see something missing.
While this recipe started as one I found, I ended up editing way more than I thought I would once I got going. I am SUPER thrilled with the results!!! 😋
What You’ll Need:
2 large Broccoli heads
6 slices Bacon
1/3 c. Edamame
3 TB. EVOO
1 TB. Tamari Sauce
1 TB. Lemon Juice
1 1/2 tsp. Minced Garlic [approx 3 cloves]
1 tsp. Crushed Red Pepper Flakes
1/2 tsp. Pink Himalayan Salt
Sesame seeds, for garnish
Red Chili Threads, for extra credit garnish 😜
Preheat oven to 450°
Cut broccoli florets from stem into bite size pieces. Cut stem into thin, smaller pieces. Place in pan.
Whisk together olive oil, tamari sauce, lemon juice, garlic, crushed pepper and salt in small measuring cup until mixed.
Pour sauce over broccoli, stirring to coat broccoli as well as possible.
Bake at 450° for 15 to 18 minutes. Be sure to check at 15. If pieces are cut too small, they might be blackened instead of roasted by 18. 😉
While broccoli is roasting, cook bacon & crumble.
Once broccoli is removed, add edamame and bacon. Place in serving bowl & sprinkle with sesame seeds. Top with a small amount of red chili threads.
Quick & easy… but such a fun twist on cooked broccoli. So, so yummy!!
