You should know by now how much I love Betsy’s Best seed butter if you’ve seen my #toastTuesday pictures.
So when Betsy came out with a new flavor [Coconut Cashew Butter 😍], I knew I had to try it!! When she asked me about working together to make up a recipe, I was so honored & excited!!!
Throw in a couple other Natural Products Expo faves like The Maple Guild, Bob’s Red Mill & Neocell and these Coconut Cashew Butter Energy Balls are EVERYTHING!!!! 💗💗💗💗💗
What You’ll Need:
¾ c. Bob’s Red Mill Gluten Free Rolled Oats
½ c. Coconut Shreds
¼ c. Bob’s Red Mill Ground Flaxseed Meal
1 TB. Neocell Super Collagen
1 TB. Hemp Hearts
1 TB. Chia Seeds [optional]
½ c. Mini Chocolate Chips [dairy free, if vegan]
⅔ c. Betsy’s Best Coconut Cashew Butter 😍
¼ c. The Maple Guild Vanilla Bean Maple Syrup
As for the chia seeds, I say optional because I was pleasantly surprised by how chia packed Betsy’s Best cashew butter was!!
She definitely doesn’t skimp on the chia seeds or coconut! 😉
Mix all dry ingredients in a bowl.
Add wet ingredients & combine.
Use scoop to create balls roughly the same size & roll into balls.
Tip for rolling the balls, I would use gloves or just put your hand inside a Ziploc bag, so nothing sticks to your hands & makes rolling easier!
Refrigerate & enjoy!! 😋
