11 Days of Super Bowl Recipes: Pizza Bites

I can’t believe it’s here. The final recipe in our series. But, don’t worry, I saved a great one for last!!

When I was first dreaming up this recipe series, one thing I wanted to do was finish with enough time for you to get a good shopping run done. After all, who wants to see a recipe they have to have posted on Saturday afternoon?! Not me. I’m trying to make your hosting easier!!! 😜

So our series ends, just like it started, on a crowd favorite: pizza!!!

But, in this case, we’re doing a couple versions of pizza bites to add to your killer food table!!

Pesto Chicken Pizza Bites

What You’ll Need:

Chicken, cooked & diced**
Pesto sauce [enough to cover chicken]
Mozzarella ball, sliced
Arugula
Tomatoes, diced & seeded
Fresh Basil

Rice Cakes

**If you want to make your prepping easier, you can get a rotisserie chicken from Costco or your local store. No one will be disappointed!

The best thing with these pizza bites is they’re not heated, so you can prep other things in the oven. 🙌🏽

Cover diced chicken in pesto sauce. I have a can a client sent me from Italy, so I used that.

Layer of arugula at the bottom.

Slice of mozzarella on top.

Tomato slices & pesto chicken on top.

Finish with a basil leaf or two.

Super refreshing & delish!!

BBQ Chicken Pizza Bites

What You’ll Need:

Chicken, cooked & finely diced**
BBQ sauce
Mozzarella Cheese, shredded
Celery, thinly diced
Brazi Bites
Fresh Cilantro

**Use Chipotle BBQ rub from Chicken Wings for an extra layer of flavor!! 😋

The idea came from Brazi Bites with their recipe here: Tomato Basil Pizza Bites

Thaw Brazi Bites & then roll 2 together into a ball. Then roll them out into small circles & place on baking sheet.

Bake at 400° for 10 minutes.

Pour a little bit of BBQ sauce on each & spread, like pizza sauce. Add shredded cheese. Then chicken.

Bake at 400° for another 10-12 minutes.

Top with cilantro & celery.

Serve hot! 😋

Now, you can also do a Buffalo Chicken Pizza variation pretty easy.

I would do a little EVOO in place of BBQ sauce. Stir the diced chicken in some Frank’s Hot Sauce. After baking, add celery & cilantro… & maybe a thin drizzle of ranch dressing!
