After the success of my Jackfruit Tacos, I knew I wanted to try something else!!
And I was thinking of fun vegan Super Bowl options to help keep all your guests happy! 😉
Jackfruit Egg Rolls just seemed like a fun idea I hadn’t seen before! Now, never mind the fact I had never made egg rolls before.
Wasn’t going to stop me from trying!! 😜
What You’ll Need:
1 can Jackfruit
Egg Roll Wrappers
1 c. Green Cabbage, chopped
1 c. Shredded Carrots
½ c. Celery, thinly sliced
1 c. Broccoli, finely cut
1 TB. Water
2 TB. Flour
Pink Himalayan Salt, to taste
Oil for frying
After prepping cabbage, carrots & celery, sprinkle with pink Himalayan salt & place each [separately] in between paper towels to absorb as much excess water as possible.
In a medium pan, cook jackfruit & broccoli on stove top first. Start with jackfruit until it’s broken up & then add the broccoli.
Mix water & flour in small bowl, to seal wrappers. You could also use egg wash if you’re not worried about them being vegan/vegetarian.
In a large, deep skillet, add a quart of oil. Heat over medium-low heat until it reaches 375°.
After laying down a single wrapper on a clean, flat surface, fill it with all the good stuff! 🤣 I added cabbage on the bottom, then carrots & celery. The broccoli & jackfruit was last, followed by some sesame seeds!
You’ll want to eye ball it, but about 1/4 – 1/3 cup worth of filling.
Brush a little of the flour paste on the edges of the wrapper to help seal the egg roll once you roll.
To roll, take the bottom corner & foldup over the filling. Then fold the sides inward towards the center & continue to roll up.
Repeat until you’ve made them all.
Carefully place 2-3 egg rolls at a time into the hot oil. Fry them for 2-3 minutes, turning with tongs as you go, so they evenly cook on all sides. They are done when they are golden brown.
Remove from oil and place on a paper towel lined plate.
For a healthier, non-frying option, especially as you host family & friends, try baking instead:
Place seam side down on parchment-lined baking sheet.
Brush with oil.
Bake @ 375° for 20 minutes, or until golden and crisp. About halfway through, rotate egg rolls to make sure they brown evenly.
