One of the easiest ways I can think of setting up a major spread for your Super Bowl party without totally losing your mind is setting up a BYO [Build Your Own] Bar. You could easily do this with meats, cheeses & veggies for sandwiches. But, again, this is the Super Bowl!!! So I want to help you create a Mexican food themed BYO _____________ Bar!!
The possibilities are endless: tacos, quesadillas, burritos, nachos, crunch wraps, taco salads, burrito bowls, etc. You get the idea.
And again, these possibilities don’t include a million ingredients, as they will all have a lot of cross over. Gluten free & corn tortillas give you a chance to cater to anyone who needs it. Vegan cheeses & non-meat options I will share can make any non-meat eater swoon!
First, I made a BQC Burrito, instead of the normal BRC at places like El Pollo Loco, simply replacing the rice for quinoa. I also traded the regular pinto beans for black beans. Perfect for anyone wanting a protein-packed burrito without meat!! A little avocado mash on the side adds a healthy fat as well!
You can obviously add a ton of other stuff, but I love a simple Avocado Quesadilla! 🙂

Another great option for vegans or vegetarians are Jackfruit Tacos & Zucchini Tacos!!
Mini Zucchini Tacos
What You’ll Need:
Zucchinis, sliced or julienned
Cilantro, for garnish
1 TB. Chili Powder
1 3/4 tsp. Ground Cumin
3/4 tsp. Paprika
3/4 tsp. Pink Himalayan Salt
3/4 tsp. Ground Black Pepper
1/2 tsp. Garlic Powder
1/2 tsp. Oregano
1/4 tsp. Red Pepper Flakes
1/4 tsp. Turmeric
Mix all together in a small bowl.
Use 1 TB. of the taco seasoning per zucchini.
Pour 1 tsp. EVOO or Avocado Oil into pan.
Add zucchini and taco seasoning.
As you stir the zucchini, the seasoning will coat it fairly easily.
**For an alternative to the taco seasoning, I would use Paleo Powder Pink if you wanted to be quick & not have to mix anything! Maybe just a tad more cumin, if you’re a fan of it. 😉
Using the same mini taco shells recipe from Mozzarella & Mango Appetizer, you can spoon zucchini right into shells. Sprinkle with lime juice from a wedge & cilantro.
If you’re doing an entire BYO _____________ Bar, you can also just have the cooked zucchini [sprinkled with lime juice & cilantro] in a bowl for guests to use in their fave creations!!
Things I would suggest for the BYO _____________ Bar:
You can use the shredded beef from the Shredded Beef Sliders recipe or ground beef from the BBQ Meatballs with Pineapple recipe! And while I wouldn’t use the actual wings, you can use the Chicken Wings recipes to create some chopped or shredded chicken! And a great non-meat option sure to win you MVP is jackfruit!
Your preference, but there are some great vegan options if you want to add a few!
Beans & Rice:
Black, pinto & refried beans are all great options.
Cilantro Lime Rice [like Chipotle] requires just 2 TB. each of lime juice & chopped fresh cilantro.
Quinoa is a great gluten free option to rice & as a complete protein will make a healthier swap! You can also add cilantro & lime juice to the cooked quinoa if you wanted to!!
Veggies & Fruit:
Zucchini, tomatoes, green cabbage, jicama, chilis, corn, bell peppers, sweet potato, mango, pineapple & butter lettuce or romaine [separate leaves for lettuce wraps]

Guacamole, salsa*, cilantro, lime wedges, jalapenos, sour cream
*For a fun & non-traditional salsa, I love pineapple mango salsa!! Just cut up pineapple, mango & a small jalapeno. Then add cilantro, to taste. So great on steak tacos! YUM!!! 🙂
