Another quintessential Game Day food in my mind is meatballs & this family recipe definitely has a twist!! 🍍
This recipe is near & dear to my heart because it’s an old family favorite. While we usually eat it over rice, I was catering an event for a friend’s non-profit & decided to serve it there, as photographed. It was a hit then & I think it’ll help win you MVP at your Super Bowl Party!!
One reason I like them for an easy Super Bowl party is to make your life easier!! You can technically make them the night before. Just reheat before the party starts. I also did a last minute pan searing just to add an extra dimension! 🙂
1.5 lb. Ground Beef
½ c. Fine Breadcrumbs
1 tsp. Pink Himalayan Salt
¼ tsp. Black Pepper
1 Egg, slightly beaten
½ c. Milk
¼ c. Shortening
¼ c. Water
2 c. Tomato Juice
2 TB. Flour
¾ c. BBQ Sauce
1 can Pineapple Chunks
Toss ground beef, breadcrumbs, salt, pepper, egg & milk.
Shape into balls.
Grease shallow pan with shortening. Place meatballs in pan & refrigerate.
In saucepan, mix water, tomato juice, flour & BBQ sauce.
Bake meatballs at 350° for 30 minutes.
Drain fat & pour sauce over meatballs.
Bake for 45 more minutes.
Spoon into dish with pineapple chunks.
In the case of a Super Bowl party, these would be perfect to keep warm in a crock pot!
Otherwise, like photographed, I would stick them with tiny picks to serve, pineapple first. Similarly, as photos show, I made meatballs smaller than normal so a can of pineapple chunks seemed a bit disproportionate. Instead, I thawed frozen pineapple “tidbits” from Trader Joe’s. 😉
