Let me start by saying I was as confused, intrigued, etc. as you probably are if you’re not familiar with jackfruit.
I heard it was an amazing meat substitute & had the texture of pulled pork. But I also was terrified by the real deal when I saw the prep work involved in a friend demonstrating how to cut into one. Cue newspapers, oiling your knife, etc. & I was like, NOPE!!!
Fast forward to Expo East where I could try jackfruit from a couple different brands. Since I’m all about what makes things easier & more practical, I was completely won over by Nature’s Charm Jackfruit Confit.
This jackfruit is already well seasoned, though you can add extra spices to it if you want a specific flavor palette. Just drain the oil & throw in a pan to heat. Since it’s low in calorie count, I add black beans & quinoa just to make it more hearty.
Now, for the tacos…….
What you’ll need:
2 cans Jackfruit Confit, drained
1 can Black Beans, drained & rinsed
1 c. Quinoa, cooked
1 mango, diced
2 tomatoes, diced
1/3 c. jicama, julienned
1/2 lime, juiced
I made the slaw first & then put it in the fridge.
Just cut them all up, juice a half of a lime & toss in a bowl. Depending on the size of your mango & tomatoes, you may want to adjust the ratio. I used smaller “on the vine” tomatoes that were in a multi-colored pack, so I needed to use more.
Drain the oil from the jackfruit & heat in a pan on stove. You’ll see it start to brown & pull apart even more like pulled pork would. Add black beans & cooked quinoa until warm. You can technically heat them all separate, but I don’t like to make any more dirty dishes than necessary! 😉
For the assembly, first thing I did was place the other colorful tomatoes on the vine on either side of the tortillas. As I built the tacos, this kept them upright. If you have taco stands, you can use those too. Once tortillas are out, scoop the jackfruit mixture onto the tortilla & top with the slaw. Sprinkle ripped cilantro leaves on top & enjoy!
If you have leftovers, they store & reheat easily. The slaw does too. Perfect lunch for the next day!
