Feta Salad

Skittles definitely got it right with their slogan, “Taste the Rainbow.”

The more we learn about healthy eating, the more we learn the color of what we eat is just as important as the category. A lot of white foods, we have learned, probably aren’t the best for us.

Similarly, when we eat fruits & veggies, though sometimes the monochromatic photo op is hard to resist, we need diversity! Every color has something to offer & none should be ignored.

That’s where this Feta Salad idea came into play.


What you’ll need:

1 Cucumber, diced
1-2 Purple Carrots, depending on size, sliced [with mandoline if you have it]
1-2 Orange Carrots, depending on size, sliced [with mandoline if you have it]
1/4 c. Roasted Corn, thawed
1/4 c. Edamame, thawed
1/3 c. Feta, crumbled
White Balsamic, to taste
Himalayan Pink Salt, pinch, to taste
Black Pepper, pinch, to taste


Note: the corn doesn’t have to be roasted, but it does add extra flavor. I get mine at Trader Joe’s in the freezer section, which is why I say thawed. [I also use it in an amazing chili recipe!]

One everything is sliced, diced, thawed &/or crumbled, put in bowl & mix with white balsamic. Add pinch of salt & pepper, and mix again.

It can be eaten as is, paired with rice cakes or crackers, or on top of some grilled chicken at a Labor Day cook out!


*Note: I didn’t add salt & pepper until after the photos to make sure the colors popped! šŸ˜‰


Especially when cook outs usually include lots of burgers, hot dogs & chips, this is an amazing way to make sure you’re still getting fresh, colorful food in there too!
